Green tea is made from the leaves from Camellia sinensis that have undergone minimal oxidation during processing. Green tea originated in China, but it has become associated with many cultures throughout Asia. Green tea has recently become relatively widespread in the Western World where black tea has been traditionally consumed.
In preparing Green tea, the oxidizing enzymes are killed by steam blasting the freshly plucked leaf in perforated drums or by roasting it in hot iron pans prior to rolling. The leaf is then subjected to further heating and rolling until it turns dark green and takes a bluish tint. The leaves are finally dried to a moisture content of 3 % to 4 %.
The Green tea liquor is generally light yellow to pale green in colour and the taste varies from light grassy to a pungent Smoky sweet taste.
